This is a refreshing chickpea salad that is super easy to make, great for summer, and even better for a budget. I make this all the time and it’s a crowd pleaser when we have a church potluck!
Perfect to have on its own or spruce up some sandwiches
2 cans chickpeas
2 tomatoes
1 cucumber
1 cup of lemon vinaigrette salad dressing
Add or subtract any of this to your taste and, voila!
Other ideas you can add are onion, chicken for even more protein, feta cheese, or avocado.
