Yesterday, our toddler was “helping” Dad outside—aka running in circles with a toy hammer while Dad was building a fence. I was inside with the baby on my hip, folding laundry with one hand and attempting to sort a mountain of paperwork with the other. The chaos was loud, lovable, and nonstop.
By the time late afternoon rolled around, I realized dinner was going to have to cook itself—or at least come together fast and feed a crew that worked hard and played hard all day (and apparently, toddlers burn a thousand calories just existing).
Enter: Cheesy Beef & Bacon Mac Bake.
This also makes a fantastic freezer meal!
Bacon Cheeseburger Mac Casserole
Ingredients
- ½ box elbow macaroni
- 1 lb ground beef
- ½ onion diced
- ½ cup bacon bits
- 1 can tomato soup
- 1 can cheddar cheese soup
- 1 can diced tomatoes undrained
- 2 cups mild cheddar cheese
Instructions
- Cook macaroni until al dente; drain.
- Brown beef + onion; drain excess grease.
- Stir in bacon bits, both soups, and diced tomatoes.
- Add cooked macaroni and mix well.
- Pour into 9×13 dish. Top with cheese.
- Bake at 375°F for 20–25 mins until bubbly & golden.
